Béatrice and Pascal farm 13 hectares in Les Chesnaies near Chinon, and have been operating organically and biodynamically since 2005. They always focus on making sure their cover crops are well planted between the rows of vines, which helps encourage diversity in the microorganisms in the soils. ‘Les Terrasses’ comes from Cabernet Franc growing on gravel/sand, hand-harvested and fermented/aged in concrete. Deep and leathery with fresh blueberry and dusty tannins.
