Winemaking: Soft pressing of the grape, fining of the must, start of the alcoholic fermentation. Second fermentation following the Chart method, aged on the lees at controlled temperatures for 6 months
From the Importer Vero Vino: ‘Ciparissa’ is slightly sparkling. This Pignoletto presents a strong straw yellow color, and it’s distinguishable for elegant fruitiness, typical of this variety—banana, apple. and peach, with pleasant tannin. Very food-friendly.
Giuseppe and Donatella founded their pictureseque estate in the Gessi Bolognesi Regional Park in the Bolognese hills covering 55 hectares of organic farming.
The estate was named after their two children, Tommaso and Isotta, while little Giulio wasn’t in the picture yet but he eventually got his own wine label (Merlot rosato Giulietto)!
Tomisa is not just wine - they have an organic cosmetics line made with the pomace of their Cabernet Sauvignon full of antioxidants and emollients which include lotions, body scrubs and milk and cacao butter.
