Castell d’Age ‘Olivia’ Cava Brut Nature NV
Location: Spain, Alt Penedès

Grapes: Chardonnay
Soil: Slate, clay, limestone
Winemaking: Organic and bio dynamically farmed. The first fermentation takes place in stainless steel tanks at low temperature. The second is carried out using the méthode champenoise (champagne method). Aged a minimum of 20 months in bottle in underground cellars at a constant temperature
From the Importer Steven Graf: In the alt Penedes, on the southern slopes of Montserrat, sits Castell d’Age - A winery tied to three generations of women. The cellar sits in an 18th century farmhouse in the small village of La Beguda Baixa. Olivia Junyent at its reins, organic viticulture and a love of tradition in the cellar, the winery has been a force for good in the region (introducing organic farming, and currently biodynamic certified).
“Part of our work involves knowing how to choose the most suitable soil for each grape variety. As for the hours of sunlight and amount of rain, the Mediterranean climate takes care of that.” The soil is fertilized with bovine compost from the estate and spontaneous growth of vegetation is encouraged. The Junyent family was already producing excellent grapes in the middle of the 20th Century. Our grandfather, Josep Maria Junyent, was the first to plant Cabernet Sauvignon in the Penedès, to celebrate the birth of his first grandchild.
