From the Producer: Local apples were frozen outside and partially thawed before being pressed whole. The very clear and high-sugar juice was frozen outside once more to further concentrate the sugars. Fermentation took place in a used French oak rum barrel.
Paper Cutter is named after the bespoke press that Jared converted from an old paper cutter found in his parent's cellar.
Lilac, faint honey and rum barrel on the nose. Mouth is bursting with honey candy and tangerine.
