The Giraudon family has been making wine in Chitry (one of the four communes in Auxerrois) for centuries. Marcel keeps the tradition by keeping yields low and hand-harvesting fruit. 85% of the Pinot Noir gets de-stalked and then macerates on the skins for a few days. Beautifully delicate with pencil-shaving dust, crushed prunes and rosepetal.
