Winemaking: A modern, thoughtful take on one of Greece's oldest wine styles. Made entirely from Roditis grapes grown on Tetramythos's high-altitude limestone vineyards near Mount Helmos in the Peloponnese, this retsina ferments spontaneously with wild yeasts in clay amphorae lined with pine resin — resin harvested from trees growing right at the edge of the very same vineyard, making this a true single-site expression. After fermentation, the wine rests on its fine lees for a couple of months before bottling.
The result is far removed from retsina's sometimes clumsy reputation: bright and vivid, with a lemony, green-apple core lifted by delicate wild herb notes — juniper — and a mineral, saline finish. The resin here plays a supporting role rather than dominating, and the wine's brisk acidity keeps everything taut and refreshing.
