Winemaking: Cryoconcentrated hard cider made with wild yeast. Late harvest dessert apples are picked in the fall and kept until winter when they are pressed. The juice is stored and frozen outside during the cold Maine winter until warming spring temperatures thaw the ice block. While much of the water volume remains frozen, we are left with a concentration of rich juice (this year the concentration was higher to limit sweetness and keep the alcohol)

From the Producer: ‘Pruner’s Respite’ is the next iteration of ‘Ice Saw’. Pruner's Respite has the same wonderful aroma of tropical fruits and creme brulee of Ice Saw but it is a bit drier to taste.

Cornish Cider Company is a small cellar cidery located on 20 acres of young orchard, field, and forest in Cornish, Maine USA. Owners Jacqueline and Jared Carr focus on creating ciders made from wild yeasts and wild seedling apple varieties found in and around Cornish along with specific apples from local orchards.
