Winemaking: Organic farming. Hand harvested. Destemmed. Allowed to settle and start fermentation in steel, then moved to foudre or large barrel if crop is small. No SO2 added unless tough vintage and he deems it necessary. Very light working of the wine – no punchdowns, only light pumpovers. No fining or filtering. Agunung in foudre for approximately 12 months.
