“No.3 Ayler” is another village level off-dry, this is sourced from various parcels on the “Grand Cru” Kupp – as such this is more the equivalent of “Senior,” in a Feinherb style. In other words, it is a “Grand Cru,” declassified and sold at village-level pricing. Most of the sites are east facing on the summit of the Kupp which gets the first rays of morning sun. This tends to be a bit deeper and broader-shouldered than the No. 4; it has more mineral complexity and more depth. The analytics are similar to the No. 4, so expect lightning bolts and some dizziness.
For those of you that know Lauer’s Stirn bottling, it is exactly the opposite of Unterstenberg, located only 300 feet up the hill. If you wanna have fun, open these bottles side by side and have a master-class in terroir. Only 300 feet apart, yet the difference between them is night and day.
In 2020 the wine is legally trocken with 5.8g/l of RS, 8.3g/l of acidity and 12.3% alcohol.
